Title: Sushi Chef / Omakase Chef to Koizen Omakase Room in Gothenburg

Koizen Omakase Room is an intimate and exclusive restaurant in Gothenburg, Sweden, where craftsmanship, premium ingredients, and the guest experience are at the absolute center. We serve a traditional yet modern omakase menu where every serving is a piece of art and every detail matters. Here, guests embark on a personal culinary journey in a harmonious setting, meeting the chef face-to-face across the counter.

About the role:

We are looking for a passionate and experienced Sushi Chef to become a key member of our team. As an Omakase Chef, your role goes far beyond cooking; you guide guests through the evening, present the dishes, and create a memorable atmosphere. You will work with the finest ingredients available and have a great opportunity to put your stamp on our menu and develop our concept further.

Main responsibilities:

• Prepare and craft high-quality sushi and sashimi according to our standards.

• Serve and present dishes directly to guests at the omakase counter.

• Handle, fillet, and quality-assure fish, seafood, and other premium ingredients.

• Maintain uncompromising cleanliness and hygiene in the kitchen and serving area.

• Contribute to the development of new flavors, techniques, and menu items.

We are looking for someone who:

• Has solid experience as a sushi chef, preferably with experience in omakase service or fine dining.

• Possesses deep knowledge of rice preparation, knife techniques, and fish butchery.

• Is highly service-oriented, social, and comfortable communicating with guests in English (Swedish is a plus but not required).

• Is meticulous, detail-oriented, and thrives in a high-paced, precise environment.
