RESPONSIBILITIES:
You will be responsible for:
PRODUCTION OPERATIONS:
- Hot kitchen, cold kitchen, TSU, robot and assembly management: ensuring that production of all goods is made on time, as per quantity requested by airlines, as per airline specifications and according to Newrest QHSE standards.
- Ensure that the Robot is operated properly and optimize its efficiency.
- Secure the processes in the department concerning hygiene, quality, quantity, meeting of time blocks and food cost
- Be prepared to give practical help in any part of the kitchen should the need arise
- Ensure that the staff under your control are aware of the cycle menu changes for the relevant clients, and that they are timeously in possession of the new menu specification.
- Conduct quality and taste checks (chef tables)
- Review the specifications on Winrest and ensuring communication with WR team for updates
- Assist in menu presentation for current and new customers’
- Ensure successful execution of last-minute orders from airline representative
- Waste tracker on WR for all the department and minimized waste
- Participate in food cost reduction
- Ensure all employees of production department adhere to the company’s HACCP Policy’s rules and regulations including, but not limited to: personal hygiene, CCP documentation, food storage, hand-washing rules and regulations, glove policy, sickness policy.
- CCP control checks and validation for all the production
- Ensure the cleanliness of the kitchen and its equipment
PRODUCTION STAFF:
- Ensure that all staff work the required hours and that the correct break periods are observed
- Scheduling of employees in the department
- Meeting the productivity targets and optimizing the workforce hours at its best to ensure control of labor cost
- Ensure Kelio accuracy at all times and updates on Kelio daily to have a full control of payroll
- Ensure all employees are wearing the correct uniforms and PPE and these are of a good conditions
- Maintain a professional standard of time keeping as required by the needs of the business
GENERAL:
- Support initiatives from management in the creation of rational processes within the department to control labour costs and reduce food cost
- Coordinating with other departments such as Winrest, Menu design, Transport, Supply Chain, Dishwash, Pick n Pack to ensure effective operations in the department
- Ensuring communication with Maintenance for Equipment Repairs or other maintenance need inside the department
- Observing all safety and security rules and procedures.
- Ensuring that all equipment and materials are not left in dangerous state.
- Ensuring all QHSE rules & procedures are followed and hazards/near miss and accidents are properly reported.
- Any other reasonable task that may be required by management
- Minimum college degree, or skills acquired via job experience
- Experienced in working with computers & different programs (MS Office etc.)
